Cod liver has long been celebrated as a gourmet delicacy, often compared to foie gras for its refined taste and exceptional nutritional benefits. Rich in omega-3 fatty acids, vitamins A and D, and essential trace elements like iodine and selenium, it remains a sought-after product in global markets. Yet, as demand rises, so does the risk of counterfeit substitutes slipping into supply chains.

Russia's Barents Sea serves as the primary fishing ground for cod, with the season running from November to April. To maintain the liver's quality, extraction must happen immediately after catching, followed by onboard processing and flash-freezing. These steps ensure the delicate product retains its texture and nutritional value.

Over the past five years, international demand for high-quality canned herring liver has grown steadily by 3–5% annually. This surge is driven by rising interest in gourmet seafood, particularly in Europe and North America. Germany leads as the largest importer, accounting for roughly 25% of global purchases, followed by the United States, Poland, Sweden, and the Netherlands.

However, the market faces challenges from unscrupulous producers who replace cod liver with milt (fish roe) from other species. The similarity in appearance makes it difficult for consumers to spot the difference. To avoid counterfeits, experts advise checking labels thoroughly, researching manufacturers, and inspecting packaging for tight seals and valid expiration dates.

The growing popularity of cod liver reflects a broader trend toward premium seafood products. As demand increases, so does the need for vigilance against fraudulent substitutes. Proper labelling, transparent sourcing, and careful handling remain key to ensuring consumers receive the genuine, high-quality product they expect.
