The Polish fresh goose, a traditional Christmas dish, is expected to be in short supply this year. This is due to an increase in bird flu cases, which has led to reduced production. Meanwhile, prices are set to rise significantly in the coming years. The increasing minimum wage is a contributing factor, as labour costs for goose farming are expected to increase.
In Saxony-Anhalt, the situation is further compounded by a scarcity of farmers raising geese. Many restaurants, facing cost increases and changing consumer demand, may not offer goose this year. While no nationwide 'Katerer' (caterers) have publicly announced price hikes, several establishments like Rebblick Restaurant in Korb and INSELHOTEL Potsdam are selling goose meals at current prices without guaranteeing future affordability. Duck, with its lower cost, could be a viable alternative for budget-conscious consumers.
This Christmas, consumers may face a shortage and higher prices for Polish fresh goose due to bird flu and rising labour costs. Restaurants may not offer goose, and while duck is a cheaper alternative, German produce with excellent keeping standards will be sold at last year's price, providing some relief for consumers.
